How to make Authentic Indian Masala Chai
Ingredients

- 3 cups of water

- 1 cup of milk

- 2 tbsp black tea (such as Assam or Darjeeling)

- 1 ½ – 2 teaspoons of grated fresh ginger

- 2–3 cardamom pods, lightly crushed

- 1–2 cloves
-
- 3-4 peppercorns
-
- 1 cinnamon stick

- 2 tablespoons of sugar or honey

- Freshly squeezed lemon juice (optional)
Instructions

- Pour the water and milk into a medium-sized pot and bring to a boil.

- Once the pot boils, add the ginger, cardamom, cloves, peppercorns and cinnamon stick.

- Reduce heat and simmer for 5 minutes.

- Add the tea leaves and simmer for additional 5 minutes.

- Add the sugar or honey, stir and simmer for an additional 2 minutes.

- Remove from heat and let steep for an additional 3 minutes.

- Strain the chai and add freshly squeezed lemon juice, if desired.
